    I tried sourdough this morning baked in a springform pan and misting the oven before I closed the door. It came out beautiful and smelled amazing (we'll eat it with dinner). Wanted an alternative to handling a 450F Dutch oven; seems to have worked!

    What about them modern ovens with double-glass door to keep the heat well and truly inside, and also that *steam function.* Maybe ask AEG or another brand for a demo unit?

    when this happened to me due to the high temperatures recently and a longer time, I almost got a nervous breakdown and didn't quite know what was going on. It kinda soothed my soul to see it happen on somebody else as well hahaha, thanks for the great vid

    I'm less than 10 loaves in to my bread/sourdough journey (we actually like it really sour out here on the West Coast USA). I love love your tips, My biggest problem is oven spring (and not getting much). I love your temperature comments, and you say it's okay to be cooler, but what about warmer? We have summer here, and my house is almost never 23 degrees or lower. I have my air conditioning set to 24-25. It's cooler in the morning, much warmer in the afternoon/evening. Should I not worry about it being 25.5c just the same as not worrying about it being very cool inside? Dough rises very quickly in the summer on my counter and almost not at all ini the fridge....     Spot on as always Jack! I just love the way you roll!☺️ I’m current making sourdough (I never would have tried without your guidance because it sounded too complicated!) each time it’s different but it always tastes so good. I made this and it looks like I did - brilliant! 😊

      I don't mind if you set standards of perfection for yourself. But my "one job" is to provide delicious, wholesome bread for my family. Of course, I try to make it pretty, too. But I have made and served some ugly, even downright hilarious-looking bread, that tasted good. I think my family can taste the love in the bread, which makes me happy. I like to offer them bread that doesn't have weird chemicals in it. (And honestly, my bread rolls that grew "horns" because I snipped them with scissors before baking, are still a subject of merriment from time to time.) My message to all bakers is, "Love yourself, love people when you can, try to love your bread." I wish you every happiness in your bread journey.

      @@OrlaQuirk My opinion is: When you stop striving for the best you could ever be or achieve, then what good are you? What's the point of living even. Just join the rest and be happy. 🙃 I have one caveat though, "Don't brag or self-congratulate. This is for others to say. Let your work speak for itself." After watching Hugh Fearnlry-Whittingstall's Scandimania TV-series, i felt that i was unknowingly a supporter of Janteloven (law of Jante). Not fully though.

      Except Jack isn’t saying not to try your best here. He said that you shouldn’t feel shame if your home bakes don’t meet impossible (AI) standards of perfection. Also, I think that people have a lot of value even if they aren’t striving to be the very best. Focusing on being happy is a worthy goal, and it’s a countercultural, difficult thing to do. I hope that anyone reading this can own their imperfections rather than calling them failures.

    Thank you so much! My brain said "yeah I know it's like 9pm, and I've never made bread before, but like...I wanna make milk bread!" I knew from the start that I wouldn't get what I needed since I wasn't weighing the flour, and I decided to not bust out the food scale anyways. And of course, I lived to regret it. "Oh cool is the bread still supposed to still be this sticky? Does it need more kneading? For how long? I'll add a little more flour but I'm nervous about overdoing it." Just from the video visuals alone and the fact I'm using all-purpose flour, I'm guessing it's not enough flour. Whatever the issue is, even if I can't fix it so late at night, I don't mind and I'll happily eat the mess I make lol. Given I have work tomorrow, I'll just throw caution to the wind, proof it, and go with the flow. But this video will be excellent for the future when I uh, decide to bake bread at a sensible hour. Cheers!

    I'm about to try your 3 suggestions, but I'm a bit disappointed by your comments...how is it we can't achieve certain textures with our homebread without additives? I don't think my grandmother in Italy was using any additives on homemade sourdough bread which was chewy, bouncy and leathery the way I'd like (supermarkets would dream achieving the same results and texures)...my sourdough made via bread maker is tasty but the texture is too soft (a bit like the sliced bread commonly found in the UK) - some suggested to idrate more - I suppose I need to increas the amount of water...it didn't work or the guy has another idea of chewiness which doesn't match mine... Give us some hope...I know there is a way - I'm prepared to work hard and no addivites please.

    Iam also retired an having a strugle here..witch flower is Ok to use ( Protein vs massive sticky dow ) I use organic 14.5 protein . How to adjust theH20 level to get this right?? Thanks Nicolas.
